Salmon Lasagna

INGREDIENTS
- 12 lasagna noodles (cooked)
- 2 salmon fillets ,12 oz total.
- 2 cups ricotta cheese
- 2 cups mozzarella cheese
- 1 cup Parmesan cheese
- 2 cups spinach
- 1 egg
- 2 cups marinara sauce
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
INSTRUCTIONS
- Preheat oven to 375°F
- Cook the salmon: Season the salmon fillets with salt and pepper. Heat olive oil in a pan over medium heat and cook the salmon for 3-4 minutes on each side until just cooked through. Break the salmon into bite-sized pieces and set aside.
- Prepare the ricotta mixture: In a bowl, combine ricotta cheese, spinach, egg, ½ cup Parmesan, salt, and pepper. Mix well.
- Layer the lasagna:
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place a layer of lasagna noodles.
- Spread a layer of the ricotta-spinach mixture.
- Add some salmon pieces on top.
- Drizzle with a bit of marinara sauce and a little cream.
- Repeat layers until all ingredients are used, finishing with noodles and the remaining sauce.
- Top with cheese: Sprinkle the remaining mozzarella and Parmesan cheese over the top.
- Bake: Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let it rest for 10 minutes before slicing period, then serve and enjoy!
