Salmon Lasagna

INGREDIENTS

  • 12 lasagna noodles (cooked)
  • 2 salmon fillets ,12 oz total.
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese
  • 1 cup Parmesan cheese
  • 2 cups spinach
  • 1 egg
  • 2 cups marinara sauce
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat oven to 375°F
  2. Cook the salmon: Season the salmon fillets with salt and pepper. Heat olive oil in a pan over medium heat and cook the salmon for 3-4 minutes on each side until just cooked through. Break the salmon into bite-sized pieces and set aside.
  3. Prepare the ricotta mixture: In a bowl, combine ricotta cheese, spinach, egg, ½ cup Parmesan, salt, and pepper. Mix well.
  4. Layer the lasagna:
    • Spread a thin layer of marinara sauce on the bottom of a baking dish.
    • Place a layer of lasagna noodles.
    • Spread a layer of the ricotta-spinach mixture.
    • Add some salmon pieces on top.
    • Drizzle with a bit of marinara sauce and a little cream.
    • Repeat layers until all ingredients are used, finishing with noodles and the remaining sauce.
  5. Top with cheese: Sprinkle the remaining mozzarella and Parmesan cheese over the top.
  6. Bake: Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  7. Let it rest for 10 minutes before slicing period, then serve and enjoy!
