Mussels in a Gourmet Cream Sauce

Mussels and Parmesan Pasta
Portions 2 people
Cooking Time 20 min• 1 pkg. Pier 33 Gourmet Mussels
• 1 tbsp. olive oil
• 1 garlic clove, thin sliced
• 6-7 plum tomatoes chopped
• ½ cup parsley chopped
• ½ cup freshly grated parmesan cheese
• 1 lb. your favorite pasta (Spaghetti or Linguine works best) cooked al dente
1. In a saucepan heat the olive oil.
2. Add garlic and cook on medium heat for 12 minutes.
3. Add tomatoes and simmer on med/high for 5 to 7 minutes.
4. Pour sauce over pasta, sprinkle with chopped parsley and grated parmesan before serving.
