Corn and Langostino Lobster Tail Chowder

Cooking Time 20 min• Pier 33 Gourmet Wild Langostino Lobster Tails
• 1 tbsp. butter
• 4 bacon slices, chopped
• ½ cup chopped onions
• ½ cup peeled finely diced
• ½ cup celery finely diced
• 1 ½ cup corn puree
• 1 ½ cup low sodium chicken broth
• 1 cup bottled clam juice
• Cayenne pepper
• 1 cup whipping cream
• 1 cup yellow corn kernels
• Salt
• 2 tbsp sour cream
• Fresh chives, chopped
1. In a pan add butter and pour in langostinos. Cook for 3 minutes and set aside.
2. In s small pot cook bacon for 5 minutes until crisp, and set aside.
3. In the same pot add the onion, carrots, celery, corn puree, chicken broth and clam juice. Combine all of the flavors and let it simmer for 10 minutes.
4. Add a sprinkle of cayenne pepper, whipping cream, yellow kernels and salt. Let it simmer for 5 minutes.
5. Take pot out of the heat and pour in sour cream, bacon and langostinos. Mix well.
6. Serve immediately and garnish with chives.
