Avocado Salmon Salad

INGREDIENTS

  • 2 Pier 33 Coho Salmon Fillets​ 
  • 3 tablespoons olive oil ​ 
  • 2 tablespoons lemon juice​ 
  • 1 tablespoon fresh chopped parsley​ 
  • 2 teaspoons garlic minced​ 
  • 1 teaspoon dried oregano​ 
  • 4 cups lettuce leaves, washed and dried​ 
  • 1 large cucumber diced​ 
  • 2 tomatoes diced​ 
  • 1 onion sliced​ 
  • 2 avocados sliced ​ 
  • Salt and pepper to taste

INSTRUCTIONS

  1. Mix the olive oil, lemon juice, parsley, garlic, oregano, salt, and pepper to taste in a large jug. Pour out half of the marinade into a large, shallow dish. Refrigerate the remaining marinade to use as the dressing later
  2. Coat the salmon with the marinade. Heat some oil in a pan over medium-high hear. Sear salmon on both sides until crispy and cooked.
  3. Mix the rest of the ingredients in a large salad bowl. Slice salmon and arrange over salad. Drizzle with the remaining dressing and enjoy!
